Asparagus Bread by Canadian Living
1lb asparagus
4 oz slices ham
1 green onion
2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. each salt and pepper
2 eggs
1 1/4 cups milk
3 tbsp. butter melted
1 cup shredded asiago or old cheddar cheese
Cook 1 lb. asparagus spears for two minutes or until still crisp and bright
green. Drain and chill under cold water. Drain and set aside on towels.
Cut ham in to 1 inch long strips. (optional)
Thinly slice green onion (or chives)
In large bowl stir together flour, baking powder, salt and pepper. In
another bowl whisk together eggs, milk and butter, pour over flour mixture.
Sprinkle with green onion, ham and 3/4 cup cheese.
Stir just until smooth.
Spoon batter into greased pan spreading evenly. Arrange asparagus on top.
Sprinkle with remaining 1/4 cup cheese.
Bake at 375 F for 50 to 60 minutes or until golden brown and cake tester
comes out clean. Let cool in pan and cut in to desired sizes.
